Honeyed, mouthfilling sweetness with hints of marmalade and lingering dry complexity. Save for foie gras. Since 1974, Sauternes estate Rabaud-Promis, in the commune of Bommes, has been astutely-run by Philippe Déjean. His improved vineyard techniques have lowered yields, and rigorous selection at harvest ensures the estate lives up to its Premier Cru status. Mostly Sémillon, with around a fifth Sauvignon, the rest Muscadelle, the wines are oak-aged for 15 months.
